The Yaye Washing Station in Sidama, built with an eye towards achieving higher cup quality through intentional experimentation, aims to produce traceable, single-variety offerings using carefully selected cherries at peak harvest. Yaye also puts a unique degree of emphasis on cleanliness and contaminant avoidance in their processing methods, requiring all equipment and the coffee itself to be washed regularly using potable water. This focus on cleanliness results in greater clarity of flavor and an overall cleaner cup.
The “special prep” descriptor is one of a number of descriptors that refer to the percentage of cherries in a given lot whose color designates them as perfectly ripe; in the case of “special prep,” that number is 90%. This ensures a juicy, fruit-forward cup with a complex interplay of sugars and acids and the perfect level of “wildness” (flavors reminiscent of fermentation processes). This particularly sweet lot tastes of cooked blueberry, dried plum, bergamot, red wine, and dark brown sugar.
