The washing station Ayla is located in the kebele (village) of Bombe in the region of Sidama. Sidama is known for producing the most coffee at the highest grades in Ethiopia, owing to its high elevation, relatively cool weather, and plentiful rainfall. These conditions cause the coffee grown in this region to ripen slower than in any other region in Ethiopia, imbuing the coffee cherries with more complex sugars and yielding deeper and more complex flavors.
This lot is composed of Ethiopian heirloom coffee varieties, meaning simply that it is made up exclusively of the native, genetically undefined varieties whose wild, unusual flavors helped to establish Ethiopia as one of the leading exporters of specialty coffee worldwide. The distinctive flavors endemic to beans grown in this region are in this lot highlighted further through natural processing, resulting in a complex, satisfying swirl of floral overtones, malic acidity, and sugary sweetness.
