Brayan Alvear is an innovative young coffee producer from the San Adolfo region in Huila, Colombia who has staked his considerable and growing reputation on fruit-fermented coffees, or fruit “co-ferments.” Co-ferments are coffees processed with the aid of added aromatic agents (in this case fresh fruit and additional natural sweeteners) resulting in flavors that are strongly reminiscent of the added agent. Or more simply; this coffee tastes like apple juice because it was soaked in apple juice.
From our point-of-view, flavor is still paramount; and this coffee is delicious, full-stop. Yes, it tastes like the freshest bottle of apple juice you’ve ever cracked, but it also has a rounded body, a creamy-smooth mouthfeel, snappy citric acidity, and a unique floral character. This coffee is more than the sum of its parts. It is a testament to Brayan Alvear’s ambition and accomplishment, and a possible glimpse into the bright future of specialty coffee.
