The origins of the Chiroso variety have long been shrouded in mystery. Initially believed to be a long-cherried mutation of the more-common Caturra, new research suggests a stronger genetic link to Ethiopian landrace varieties. This would go a way towards explaining the variety’s appealingly bright acidity, potent florality, and slightly herbaceous character.
The Chiroso de San Carlos Project aspires to realize the full potential of the Chiroso variety while simultaneously supporting the farmers of Urrao, Antioquia. Most farms in Urrao are small, about 1.5 hectares, and rely on family labor with minimal pesticide use. This meticulously crafted honey-processed microlot highlights the complexity and elegance of the Chiroso variety, undergoing a carefully controlled process to develop its layered flavors and preserve its refined sweetness.
