This innovative new process involves an extended in-cherry co-fermentation with a blend of cane honey, resulting in a rich, unctuous sweetness and wild, mildly-alcoholic flavors. The Purple Honey process is the brainchild of ambitious young producer Alvaro Andres Cardona Molina, who has been working in the family coffee business since he was twelve years old! He now manages his uncle’s Villa Lucia farm, where he experiments with a wide array of endemic coffee varieties, including Colombia, Castillo, and Cenicafe. His experimentation has yielded a juicy, full-bodied coffee with the complexity of a chocolate-and-wine pairing and the satisfying sweetness of a blueberry smoothie.
