Though washed coffees have long been the norm in Ecuador, the past decade has seen a multitude of innovative producers applying new methods of cultivation and processing, particularly in the province of Loja. This mountainous region on the border of Northern Peru boasts ideal climatic and geographic conditions for coffee growing, and recent investments from local farmers in modern canopy systems and other advanced post-harvest quality control measures have begun to yield even sweeter, juicier cups of coffee than in years past.
Jose Saritama’s farm in the heart of Olmedo canton sits on the cutting edge of this newly innovative approach to coffee production, offering microlots of exceptional cup quality and uniquely vibrant flavor. This gorgeous microlot was intentionally processed utilizing anaerobic fermentation, yielding both a winey acidity and a hoppy mouthfeel. In this cup, you’ll also encounter the zesty acidity and fruitlike sweetness of the bourbon variety, tasting fresh cranberry, orange, and cascara. Enjoy!
